healthy recipes: homemade peanut butter

It is all in the news, but it is also just plain common sense - to eat right, you need to get back to the basics. When we're in the grocery store, I just cringe at all the processed foods in people's carts. Our family tries very hard to eat well - including grass-fed meat, organic fruits and veggies, and the least amount of processed food possible. Especially in this time of the peanut-butter recalls, it is even more important to watch what you eat.

 

One of our very favorite recipes is also the easiest one that we make. Make it in small quantities, and keep it in the refrigerator. Use within a week. We eat it every day, so it goes quickly!

 

Homemade Peanut Butter

 

peanuts - roasted, highest quality possible

salt (if desired)

oil (if desired)

 

Place the peanuts in your food processor. Add salt if you like - I prefer a bit of sea salt! You can add a drop or two of vegetable oil (we love safflower) if you'd like - it depends on the peanuts.  Turn your food processor on and keep it going, for longer than you think it needs. It will clump up a bit  - if it doesn't smooth out within 30 seconds or so, add a bit of oil now.  If you like it chunky, watch and see when it is smooth enough. If you like it smooth, keep it going a bit more.  DO NOT use olive oil - it tastes strange.

 

If you don't run the processor long enough, the peanut butter won't be spreadable, but more like a paste.
